While walkie talkie suggests chicken feet, this recipe is actually made using chicken breasts with a generous amount of seasoning called Walkie Talkie seasoning. I follow a low carb lifestyle and I am constantly on the hunt for spice blends that do not contain cereal, MSG, sugar or fillers. Walking Talkie seasoning ticks all the boxes and is super versatile. This quick and easy recipe is a great for a weeknight meal. It is also known to be “plate licking” good, don’t say I didn’t warn you. Serves 4.
Ingredients:
- 4 chicken breasts – flattened lightly with a meat mallet.
- 3 to 4T Walkie Talkie seasoning
- 2T Butter
- 1t Extra Virgin Olive Oil
- 1 Lemon or orange juiced
- 1 Cup of coconut cream
Method:
- Season the chicken breasts liberally with Walkie Talkie seasoning.
- In a large pan heat the butter and the olive oil (the olive oil will stop the butter from burning)
- On a moderate heat, lightly brown the chicken breasts on both sides.
- Once they have started to brown and the butter starts to catch, add the lemon juice to deglazed followed by the coconut cream.
- Allow to simmer without the lid on for 5 to 10mins, taking care not to overcook the chicken breasts.
- Serve with panfried cauliflower rice which has been dolled up with mushrooms and coriander.
